FORAGE FED KATAHDIN LAMB
Not all sheep are created equal. Some have wool, which needs to be sheared on a regular basis. Lanolin is the oily substance that makes sheep wool so desirable. Wool sheep produce lanolin. Lanolin creates a strong tasting lamb. Some sheep are called hair sheep because thay have hair instead of wool. Thus, hair sheep never need to be shorn. Hair sheep do not produce lanolin. Hence, hair sheep are a milder tasting lamb.
Most Americans turn their noses up at lamb. They say they don't like the gamey flavor. It is doubtful that they have ever eaten true lamb. More likely, it has been mutton. Lamb is defined at being a year and under in age. Most commercial lamb raised and sold in the USA are older sheep over a year old. A high percentage of this mutton is from wool sheep. Combining older sheep and lanolin equals a strong tasting, tougher meat. This is why our lamb is young and of a special non lanolin producing hair breed.
We use the Katahdin breed. They are known for their substantial carcass yeilds and for producing delightfully tender and mild meat. Combine these gourmet genetics with the varied salad bar of forages available to these sheep and you have a most outstanding culinary experience awaiting you.
Clovers, rye grass, wheat grass, oat grass, peas, alfalfa and native grasses sustain and flavor the Katahdins. Raised to about 100 pounds before they are processed, they yeild an outstanding 50% compared to the usual 40% of most sheep. Sold by the whole, half and bundle, locally raised forage fed Katahdin lamb will make even non lamb lovers ask for more!
